Ancient tradition combines with modern innovation – because the Corallo family are nothing if not creative. Here, they take a centuries-old technique – a style of chocolate making only found today in their hometown of Modica. Working their chocolate cold – just like the Ancient Aztecs taught them – they create a bar that is refreshingly bittersweet, with a crumbly texture that falls to pieces in the mouth. But then, they add a fiery twist, with the addition of fresh chillies. It brings out the natural sweetness of the chocolate, and can add a touch of spice to any dessert.
