The Rustichella family always gathered together for a big meal at weekends. And that meal always started with pasta, dressed with a sauce made with sugo finto. The name, meaning ‘fake sauce’, comes from the fact that it’s bare, with no meat added. Serafina, the grandmother, would use it as a starting point, adding whatever seasonal ingredients she had to hand. The result was always known by the family as ‘Sunday Sauce’.
Made with local Pera d’Abruzzo tomatoes, it’s the perfect base for all your favourite pasta dishes. Try Aldo Zilli’s recommendation – pair it with chitarrone pasta and tiny meatballs.
