Rumour has it that this pasta shape was created to smuggle garlic across the alps and into Austria, perfectly sized to store four garlic cloves! Originally called Paccheri, this slightly smaller version of the traditionally giant shape remembers its past – it pairs well with strong garlic flavours, and is still ideal for use with heavy, meat-based sauces. Or, for something a little different, try stuffing them with mushrooms and serving them with a white, wine laden sauce.
